It's summer so we thought it would be good to share a favourite drink from Scratch Food Truck. This truck is the brain-child of Minnesota-raised Chef Geoff King and wife Aimee King. The concept of Scratch is about sustainable/local food made fresh daily with a Pacific Islander/Asian influence. Growing up where food was family, celebration, tradition, and life sculpted our menu. We read somewhere recently that Charlie Dumpling is doing a Cheese Burger Dumpling and that it would be the greatest fusion of 2014 if they pulled it off. Whilst we would love to take the credit for the idea, we’ve had it on our pop up menu since August, a young couple called Julia & Reid invented a Bacon Cheeseburger Dumpling back in 2010. We came across their Food Truck “The Dump Truck” in Portland Oregon and we loved it so much we decided to try and make our own. A party in Colombia was not a party without Palitos de Queso. These sticks of white cheese (queso blanco) are wrapped with dough and fried until golden. They are served all over Colombia at coffee shops and you will find them at just about every market. We are still trying to perfect the recipe at Kuku Mama but we reckon they are pretty awesome. We’ve just started to experiment with making the Queso Blanco cheese ourselves as its not readily sold in Australia.
