Watermelon Jalapeno

It's summer so we thought it would be good to share a favourite drink from Scratch Food Truck. This truck is the brain-child of Minnesota-raised Chef Geoff King and wife Aimee King. The concept of Scratch is about sustainable/local food made fresh daily with a Pacific Islander/Asian influence. Growing up where food was family, celebration, tradition, and life sculpted our menu. Here's a delicious summer drink you can try at home. Add vodka for an amazing cocktail!

INGREDIENTS

2 1/2 cups lemon juice
1 1/2 cups sugar
1 jalapeno, seeded, deveined and chopped
1/2 seedless watermelon, chopped
16 fresh mint leaves, optional
Ice
Lemon slices, for serving

DIRECTIONS

In batches, combine 12 cups water, the lemon juice, sugar, jalapeno, watermelon and mint, if using, in a blender. Blend to a puree.

Allow the puree to steep for 10 minutes before straining it through a fine mesh sieve. Chill well.

Serve chilled, with ice and a lemon slice floating at the top.
